Asian Style Coconut Cream & Marrinated Tofu


 This Dish is a treat I was craving Thai food and I was hoping to recreate the flavor of this popular Asian Soul Food. But in lockdown, It would be impossible to go to a restaurant for this. So I had to think quick! and I just happen to have found these ingredients at Trader Joes. this dish was inspired because I missed the flavors of lemongrass,  creamy coconut milk, and hot spices. I must admit this is the best thing I have made all year. No doubt about it!.! These are the ingredients and how I made: marinated Tofu w/ Lemongrass, Tumeric, with Coconut Cream- long name huh!


1 to 1/2 package of Trader Joes firm Tofu
1/4 cup of soy sauce
1 table of brown sugar
1/2 package mixed vegetables.

1/8 cup of scallions
1 teaspoon garlic powder. Sprinkle of pepper

 2 teaspoons Mekhala Organic Lemongrass turmeric paste (Trader Joes)

2 tablespoons Mina Harissa Spicy Moroccan Red Pepper Sauce (whole foods))
2 tablespoons sesame oil


Mix these ingredients in a bowl and let sit for a few minutes.
Pour a little oil or coconut oil in a saucepan to get hot.

Saute mixed ingredients in hot oil, then give it a little water and simmer for 15 minutes, on low heat.
Add mixed vegetables halfway through the simmering process, at the end of the process add coconut, stir, and turn off the heat, and finish simmering.
Heat your rice or make a pot of rice.

You can, of course, use all the fresh ingredients, but for me, the less variable I have to deal with the fewer mistakes I tend to make. Most of the ingredients are from Trader Joes because they had a short line on my way home so I jumped in line Lucky Me!
