This Dish is a treat I was craving Thai food and I was hoping to recreate the flavor of this popular Asian Soul Food. But in lockdown, It would be impossible to go to a restaurant for this. So I had to think quick! and I just happen to have found these ingredients at Trader Joes. this dish was inspired because I missed the flavors of lemongrass, creamy coconut milk, and hot spices. I must admit this is the best thing I have made all year. No doubt about it!.! These are the ingredients and how I made: marinated Tofu w/ Lemongrass, Tumeric, with Coconut Cream- long name huh! 1 to 1/2 package of Trader Joes firm Tofu 1/4 cup of soy sauce 1 table of brown sugar 1/2 package mixed vegetables. 1/8 cup of scallions 1 teaspoon garlic powder.
